Diabetes Reversal Cookbook
Last year I worked long and hard on 150 recipes for Dr. Barnard’s new diabetes reversal cookbook, which officially releases tomorrow!

All the recipes in this book are whole foods, plant-based (oil-free). I had already been working on new recipes, toying with the idea of writing a new solo cookbook.

Soon after clueing up The Cheese Trap recipes, however, the good doctor offered me this opportunity to co-author on this new project.

I was off and running with recipe development and testing. I channeled many of these recipes I had already developed into this diabetes reversal cookbook, and developed many more.

At last, the book is here! I just received my copies, and thrilled to see it in print.

The book is beautifully produced. It’s hard cover, has a stunning photo insert, and a clean design with a font that’s ‘sturdy’ and clear.
The book’s introductory chapters written by Dr. Barnard cover what it means to reverse type 2 diabetes (and the distinction between type 1 and type 2), our healthy food groups and related nutritional highlights. Then my recipe chapters follow. It is a full cookbook (unlike The Cheese Trap which was a health book with supplemental recipes).

I love the recipes, and so did my testers. It was really important to me to maintain flavor integrity while meeting the nutritional parameters of Dr. Barnard’s diabetes program.
What are some of my very favorite recipes in the book?…

Might surprise you that one of my favorite recipes is the Rad Thai. Usually I select a bean-y dish… ok, or a dessert!… but man, the Rad Thai is something special. I don’t have the image from the book, but will update when I do! It rivals any restaurant pad thai, and far less greasy.

Some of my other favorites:
Breakfasts: Cauliflower Scramble, Lemon Pineapple Muffins, Baked Oatmeal Cups, Polenta Porridge with Berry Swirl, Champion Muesli, Rice Breakfast Bake

Dips/Sauces/Salads (I’m combining chapters here:) Lentil Baba Ghanoush, Warm Cheesy Sweet Potato Dip, Quinoa Kale Caesar with Cheesy Croutons, Moroccan Bean Salad

Sides/Soups (again, combining chapters): Soft-Baked Tamari Tofu (our kids devour this, not quite a side for them!), Moreish Lemony Quinoa, Sweet Potato Crisps (omg I devour these!), Cauliflower Chili, Robust Crimson Bean Stew, Thai Corn and Sweet Potato Stew (cover photo)

Mains: Righteous Lasagna, Lentil Bolognese, Sweet Potato Shepherd’s Pie, Thai Red Lentils, Green Chickpea Falafels, 10-Minute Stir-Fry (I make this often), BBQ Bean Burgers, Loaded Sweet Spuds (oh yeah!), Italian Bean Burgers, Tex-Mex Beans ‘n Rice, Lemon-Tahini Pasta Sauce with Spinach, Pizza! Pizza!, and of course… Rad Thai!

Desserts: Chicky Chocolate Cake with Magical Chocolate Frosting, Easy-As-Pie Baked Apples, Salted Caramel Sauce, Berry Bubble, Apple Crisp, Oatmeal Chippers

As you can see, there’s a lot of variety, and a lot to love! No ‘missing out’ with these balanced, nutrient-dense recipes.

Thai Corn and Sweet Potato Stew (Definitely my favorite Thai dish).
Lemon-Tahini Pasta Sauce with Spinach( I’m in love with the Annies Goddess dressing,. And very interested to see how you made it into pasta sauce).
