Ingredients: 2 tbsp white or red wine (can substitute orange juice or water); 1/4 cup tomato paste; 1/3 cup water; 2 tbsp brine from jar of olives; 1 tbsp balsamic vinegar; 1 tsp pure maple syrup; 3/4 - 1 tsp sea salt; 1 tsp dried oregano (or 1 tbsp chopped fresh); 1 tsp dried basil (or 1/4 cup fresh leaves); 1/2 tsp dried rosemary (or 1 tsp chopped fresh); Freshly ground black pepper to taste; 4 cups precooked and cooled (about 1 lb red or Yukon gold potatoes, cut in small cubes about 1” thick (see note)); 1 1/2 cups chopped tomatoes; 1 cup red bell pepper (chopped); 2 cans (14 oz) chickpeas (rinsed and drained); 2-3 cups frozen or canned artichokes (drain and rinse if using canned); 2 medium-large cloves garlic (minced or grated); 2/3 cup sliced kalamata olives; 1/4 cup chopped sun-dried tomatoes; Optional: balsamic reduction for serving; chopped fresh basil (balsamic reductions)
