Enchanting Strawberry Chia Pudding (or sauce)

Most chia puddings use non-dairy milk as a base. For this fresh and beautiful version, strawberries are the star! The color is vibrant and the flavor is fabulous.

  • For the strawberries, don’t fuss with chopping. Just slice or cut in half to get a rough measure. This recipe is flexible! In a blender, add just 1 cup of the strawberries, chia seeds (see note), orange juice or water/maple syrup, and vanilla/salt/dragonfruit powder (if using). Puree until smooth. Add the remaining strawberries and pulse through to roughly chop (keeping some chunky consistency of the strawberries) Alternatively, you can dice by hand and stir into the pureed mixture. , but keeping some chunky consistency of the berries. Refrigerate (will thicken with chilling) or serve. Or... try it as a sorbet using the Ninja CREAMi (see this post).

Notes

Chia Seed Note: I like this recipe with just 1 1/2 tbsp of chia. It will yield a texture that's like a thick sauce that can be layered with non-dairy yogurt (as shown) or served over oatmeal, waffles, or pancakes. If you'd like a thicker texture, add up to 2 1/2 tbsp of chia so it will set like a chia pudding.
Orange Juice Note: If you do not want to add a sweetener like maple syrup or date syrup, try 1/4 cup of fresh orange juice. Depending on the sweetness of the juice, and also the ripeness of the berries, you may still opt for a touch of maple syrup. It’s your choice, sweeten as desired!
Dragonfruit Powder: I use Wilderness Poets dragonfruit powder. The color is enchanting! Also, it will add a touch of natural sweetness so you may not need/want the maple syrup.
Serving Suggestions: Enjoy straight up, or to top waffles, pancakes or oatmeal. Try over non-dairy ice cream, or layered parfait-style as we've done here with non-dairy yogurt.
