What on earth? A winter squash sauce? Yes!
Once you try this rich, curried winter squash sauce you will make it regularly. Because not only is it delicious and easy to make, it is so versatile.
You will want to use it for pasta (as I initially intended when creating this recipe) or use it as a healthy, luxurious, and flavorful vegan sauce for buddha bowls or just to top on grains.
Furthermore, because this sauce is fully prepped in the blender, you can even enjoy it as a soup, heating it on the soup setting on your high-powered blender. (I give tips on that in my video, and you can use my Blendtec Coupon code for 20% off: YAY-BLENDTEC, link here).
This week I decided to share a Rich Curried Winter Squash Sauce (from Simply Plants).
Now, in Simply Plants I showcase this sauce with pasta, served drizzled with cashew cream.
But this sauce is so versatile, I encourage you to try it with grains, over potatoes or grains, or as I mentioned, straight up as a warming pureed soup. Or, try one of the ideas that my friend Molly offers up – so creative!

I made this squash sauce two days ago and enjoyed our buddah bowls for lunch. Wasn’t totally in love with it so I turned it into a soup. Our second round of this soup I added more vegetable broth and some tofu and its outstanding!!
