Once you try this rich, curried winter squash sauce you will make it regularly. Because not only is it delicious and easy to make, it is so versatile.
You will want to use it for pasta (as I initially intended when creating this recipe) or use it as a healthy, luxurious, and flavorful vegan sauce for buddha bowls or just to top on grains.

I made this squash sauce two days ago and enjoyed our buddah bowls for lunch. Wasn’t totally in love with it so I turned it into a soup. Our second round of this soup I added more vegetable broth and some tofu and its outstanding!!
