Vegan Zucchini Fritters
Zucchini fritters are easy to make, and a fabulous way to use seasonal zucchini! This recipe is vegan, gluten-free, nut-free, and oil-free.
INGREDIENTS
grated zucchini, chickpea flour, lemon juice, tahini, dijon mustard, chives or sliced green onions, salt, dill seed, freshly ground black pepper to taste
These fritters are best pan-fried. Oven baking doesn’t give the same texture. I use a large

for these (and for other oil-free pan cooking).
