Well guys, we are getting close to the new release of Let Them Eat Vegan! For those that have been wondering, I will indeed be offering a new “buy-on” promotion (this time it will be a week-long promo, details forthcoming, stay tuned).

I am fairly new to the whole vegan thing and have fallen in love with cooking again because of this new lifestyle. In fact my hubby and kids all pulled together to buy me a food processor for Mother’s day to help me along the way. I would have to say beans of all kinds but especially black and pinto. You can do so many wonderful things with them. I love chick peas too.

Thanks K! About the soy, no not that much. There are 200+ recipes and of those about 7 or 8 recipes with tofu and another couple with tempeh. I offer soy-free options for some of those as well. You have an allergy, or just not a big tofu fan?

Oh… certainly avocado!!! And my 20 month old vegan boy shares my deep deep lover for this awesome fruit. Avocado can be eaten with almost anything, but one of our favourite deserts is avocado smoothy. Yum, yum indeed.

Beans are my favorite. They are so versatile. I buy dry beans, cook them up, and store them in 1/2 cup increments in my freezer. I can substitute 3 packs of the frozen ones (thawed) for a can, puree them and put them in a soup to thicken it up, use thawed ones in casseroles, etc.

My favorite plant-powered food is nuts. They are natures delicious treats to us, packed with delicious protein and good fat. I eat either cashews or almonds every day. Not to mention the wonderful products that come out of nuts such as almond milk, almond/peanut/cashew butter. Wonderful!

It’s so hard to pick one! I love everything that has been mentioned (with the exception of cilantro, which tastes like soap to me). I’ll go with BEETS because they are delicious, healthy, beautiful, and I feel they are an under-loved vegetable. 🙂

Since becoming vegan a year ago, I’ve re-discovered foods I ate for a short time when my family went macrobiotic to support my father who had lung cancer. Sadly, his cancer was aggressive he died within a short period of time. But for six months I ate foods I’d never had – seaweed, millet, seitan, tofu, tempeh, miso…and others. Those flavours are now so much more – they carry a memory, a sad one maybe, but as I was young when my father died, any memory I have of him is precious. so, these are my power foods (with the exception of tempeh which I still can’t develop a taste for).

My favourite plant powered food is brown rice because you can do almost anything with it. From Asian and Indian meals, to breakfast cereal, to burgers and burritos. It’s the ingredient I use more than any other. I can’t get enough brown rice! 🙂

I have lots of favorites but right now I’m training for a half ironman and so it’s yams! Yam fries (baked with coconut oil of course) almost every day… but it changes depending on what my body needs (it was cauliflower a few weeks ago and artichokes after that). Thanks for the new book Dreena, it’s amazing! I would love to win this to pass it on to my girlfriend who is expecting her second baby. CHICKPEAS!!! Love em! and now that I have mastered making them from a bag rather than opening a can I make them in advance. I then freeze them in ziplock bags so they are ready when I need them to add to a recipe or defrost and eat as they are!

Almonds! I carry them in my backpack, purse, and keep them in my glove box as “emergency almonds.” This way, I can use them to hold me over until I can get some real food (and prevents me from buying something that wouldn’t really fill me up, anyway.) They also make almond butter, another one of my favorites 🙂

As a former bacon queen I, for one, wasn’t sure going plant powered would work for me and second, thought that giving up bacon would be like prying a toy from a toddlers hands. I was mistaken! I don’t miss meat, especially bacon, at all! My new bacon is kale. I could eat it all day on everything. I always have it on hand, tear little pieces off and add to whatever I’m eating. Well, maybe not ice cream, but who knows I might like that too!
